Zucchini, Peppers, and Tomatoes Recipe

INGREDIENTS

  1. 1lbzucchini
  2. 2tablespoonsbutter
  3. 1tablespoonolive oil
  4. 1cup slicedonions
  5. 1-2cup slicedbell peppers(any color)
  6. 1 1/2cups peeled seeded andchopped tomatoes
  7. 1teaspoon choppedfresh basil
  8. 1/2teaspoonoregano
  9. salt & freshly ground black pepper
  10. 1/2cupfeta cheese or1/4 cupparmesan cheese (optional)
  11. 1/2cup slicedblack olives, to taste (optional)

DIRECTIONS

  1. Wash, trim, and slice zuchinni.
  2. Salt zuchinni lightly and allow to drain for about ten minutes, then pat dry.
  3. Heat the butter and oil, sautee onions until wilted.
  4. Add the zuchinni and peppers, cook 2 to 3 minutes.
  5. Stir in tomatoes, herbs, and add salt and pepper to taste.
  6. Cook 4 to 5 minutes, or until the vegetables are tender.
  7. If the tomatoes are especially juicy, cook briefly ov er high heat to reduce pan juices.
  8. Remove from heat, stir in optional feta and olives or parmesan, if desired.
