Zucchini Bread Recipe

INGREDIENTS

  1. 3eggs, beaten
  2. 2cupssugar
  3. 1cupvegetable oil
  4. 2teaspoonsvanilla
  5. 3cups siftedflour
  6. 1teaspoonbaking powder
  7. 1teaspoonbaking soda
  8. 1teaspooncinnamon
  9. 1teaspoonsalt
  10. 1/8teaspooncloves
  11. 1/8teaspoonginger
  12. 1/8teaspoonnutmeg
  13. 1/8teaspoonallspice
  14. 1largezucchini, trimmed and grated
  15. 3/4cup choppedpecans

DIRECTIONS

  1. Heat oven to 350°; Beat eggs, sugar, oil and vanilla together until smooth; stir in flour, baking powder, baking soda, cinnamon, salt, ground cloves, ginger, nutmeg and allspice until just combined; stir in zucchini and pecans.
  2. Spoon into two greased 8×4-inch loaf pans, filling 3/4 full; bake until golden and a cake tester tests clean, about 1 hour.
