Wheat-free, Dairy-free Banana Bread Recipe

INGREDIENTS

  1. 1/4cupnuts
  2. 1 3/4cupsamaranth flour, sifted
  3. 1/2cuparrowroot
  4. 2teaspoonsbaking soda
  5. 1/2cupnuts, roughly chopped
  6. 1 1/2cupsbananas, mashed
  7. 1/4cupvegetable oil
  8. 1/4cuphoney
  9. 2eggs
  10. 2tablespoonslemon juice
  11. 1teaspoonvanilla extract

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Grease a 9″x5″ loaf pan.
  3. Process the 1/4 cup nuts in a blender or food processor until finely ground.
  4. Stir together the nuts with the flour, arrowroot and baking soda in a small bowl.
  5. In a separate large bowl, mix together the bananas, oil, honey, eggs, lemon juice and vanilla.
  6. Mix the dry ingredients into the wet ingredients- try not to overmix.
  7. Fold in the chopped nuts.
  8. Pour into a greased 9×5″ loaf pan or 2 7×3″ pans.
  9. Bake for about 1 hour, until a toothpick inserted into the center of the loaf comes out clean.
  10. Let cool in the pan for about 10 min, then turn the loaf out onto a wire rack to cool completely.
