Walnut Crepes With Mocha Sauce Recipe

  1. 1 1/2cupsground walnuts(about 6 ounces shelled)
  2. 3/4cupsugar
  3. 3/4cupmilk
  4. 1/4cupraisins
  5. 1/2teaspoonground cinnamon
  6. 1/2teaspoon gratedfresh lemon rind
  7. 6ouncessemisweet chocolate, cut into small pieces
  8. 2/3cupstrong coffee
  9. 2teaspoonsalmond flavoring
  10. 3tablespoonsbutteror margarine
  11. 12dessert crepes(use Basic Whole Wheat French Crepes, adding 2 tbls. sugar to the batter or crepe recipe of your choi)
  12. 1cupheavy cream (optional)


  1. In a small saucepan, bring the walnuts, 1/2 cup of the sugar, the milk, raisins, cinnamon, and lemon rind to a simmer over moderately low heat.
  2. Cook, uncovered, for 5 minutes, stirring occasionally.
  3. Let cool completely.
  4. Meanwhile, prepare the sauce:.
  5. In the top of a double boiler, warm the chocolate, the remaining 1/4 cup of sugar, and the coffee over simmering water, stirring, until the chocolate melts and the mixture is smooth.
  6. Remove from the heat and stir in the almond flavoring and butter.
  7. Set aside.
  8. Preheat the oven to 350*F.
  9. Place a crepe with the more attractive side down and spread with 1 tbls.
  10. of the walnut mixture.
  11. Roll up tightly and place, seam side down, in a buttered, 13″x9″x2″ baking dish.
  12. Repeat until all crepes are filled.
  13. Cover with foil.
  14. *Atthis point the dessert can be stored.
  15. Let the sauce cool to room temperature; transfer to a tightly covered container.
  16. Refrigerate the crepes and sauce for up to 5 days or label and freeze for up to 1 month at o*F.

  18. Preheat the oven to 350*F.
  19. Bake the foil-covered crepes for 10 minutes.
  20. Uncover and bake until heated through-about 5 minutes more.
  21. At the same time, reheat the sauce in the double boiler over moderate heat until warmed through-about 5 minutes.
  22. Meanwhile, in a medium size bowl, whip the cream, if desired, until soft peaks form.
  23. Drizzle the hot crepes with some of the mocha sauce and pass the remaining sauce and whipped cream.
  24. Serves 6.
