Vidalia Onion Souffle Recipe

INGREDIENTS

  1. 2tablespoonsbutteror margarine
  2. 5mediumvidalia onions or sweet onions, chopped
  3. 2cups freshbread cubes(about 10 slices, crusts removed)
  4. 1 (15 ounce)canfat-free evaporated milk
  5. 3largeeggs
  6. 1 (15 ounce)can shreddedparmesan cheese
  7. 1teaspoonsalt

DIRECTIONS

  1. Melt butter in a large skillet over medium heat; add chopped onions, and sauté 10-15 minutes or until tender.
  2. Place onions and bread cubes in a large bowl.
  3. Stir in milk, eggs, 1 cup of cheese, and salt.
  4. Pour into a lightly greased 1 1/2 quart soufflé or baking dish.
  5. Sprinkle with reamaining 1/4 cup cheese.
  6. Bake at 350 degrees for 25 minutes or until set.
