Vegetable Dumplings Recipe

INGREDIENTS

  1. 2cups mincedshiitake mushrooms
  2. 1/2cup mincedonions
  3. 1cup mincedfresh spinach
  4. 3garlic cloves, minced
  5. 1tablespoon mincedfresh gingerroot
  6. 1teaspooncurry powder
  7. 1tablespoonsherry wine
  8. 2egg whites, lightly beaten
  9. 2teaspoonsreduced sodium soy sauce
  10. 1/2teaspooncayenne pepper
  11. 60wonton wrappers, for steaming
  12. 4leaveslettuceor kaleor spinach

DIRECTIONS

  1. Combine mushrooms, onion, spinach, garlic, ginger root, curry powder, sherry, egg whites, soy sauce and cayenne pepper in a large bowl.
  2. Mix thoroughly.
  3. Place a tablespoon of the mixture in the center of a wonton wrapper.
  4. Raise the corners and pinch them together, leaving a small opening for steam to escape.
  5. Line the bottom of a steamer basket with lettuce, kale or spinach leaves.
  6. Place a layer of dumplings in the steamer, and steam until dumplings are done, about 10 minutes.
