Ultimate Tortellini Soup Recipe

INGREDIENTS

  1. 1lbItalian sausage
  2. 1cup coarsely choppedonions
  3. 3clovesgarlic, sliced
  4. 5cupsbeef broth
  5. 1/2cupwater
  6. 1/2cupdry red wine(use a wine you would drink, do not use cooking wine. Something like a good merlot or cabernet would)
  7. 2cupschopped tomatoes(2 cans)
  8. 1cup thinly slicedcarrots
  9. 1/2teaspoonbasil
  10. 1/2teaspoonoregano
  11. 1 (8 ounce)cantomato sauce
  12. 1 1/2cups slicedzucchini
  13. 8ouncescheese tortellini(2 cups)
  14. 3tablespoons choppedparsley
  15. 1mediumgreen pepper
  16. 2cupsfresh spinach leaves
  17. gratedparmesan cheese

DIRECTIONS

  1. Brown sausage.
  2. Drain and set aside.
  3. Sauté onion and garlic in olive oil until fragrant and translucent.
  4. Careful not to burn the garlic.
  5. Add broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage.
  6. Boil 30 minutes.
  7. Stir in zucchini, tortellini, parley, peppers.
  8. Simmer 35-40 minutes.
  9. Right before serving, stir in the spinach leaves.
  10. Sprinkle with parmesan.
