Tweeked Jalapeno Poppers Recipe

INGREDIENTS

  1. 30largeshrimp(cooked & defrosted)
  2. 8ouncescream cheese
  3. 15jalapenos
  4. 1/4-1/2cup choppedscallions
  5. 30slicesbacon(thin is better)
  6. 1cupcheddar cheese(or your fav will work)
  7. 1/2teaspoonseason salt

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Half and seed jalapenos.
  3. In bowl, mix cheeses, salt, and scallions.
  4. Scoop into each jalapeno half.
  5. Press a shrimp into middle of each.
  6. Wrap each with slice of bacon.
  7. Bake on broiler pan (lets excess fat drain off to get crisp all around) until bacon is desired crispness (I like mine well-done and crispy which take about 45 minutes).
