Tweed Squares for Cookie Princess Recipe

INGREDIENTS

  1. 1ST LAYER

  2. 1/2cupbutter or margarine(125 ml)
  3. 2/3cupgranulated sugar(150 ml)
  4. 1 1/3cupsall-purpose flour(325 ml)
  5. 2teaspoonsbaking powder(10 ml)
  6. 1/2teaspoonsalt(2 ml)
  7. 1teaspoonvanilla extract(5 ml)
  8. 1/2cupwhole milk(125 ml)
  9. 2ouncessemi-sweet chocolate baking squares, grated
  10. 2egg whites
  11. 2tablespoonsgranulated sugar(to add to egg whites 30 ml)
  12. 2ND LAYER

  13. 1 1/2cupsconfectioners’ sugar(icing)
  14. 2egg yolks
  15. 1/3cupbutteror margarine
  16. 3RDTOPLAYER

  17. 2ouncessemi-sweet chocolate baking squares
  18. 2tablespoonsbutter or margarine(30 ml)

DIRECTIONS

  1. 1ST LAYER:.
  2. Cream the butter and 2/3 cup sugar.
  3. Add in the vanilla extract.
  4. Mix together the flour, baking powder and salt.
  5. Add alternately to the creamed mixture with milk, beginning and ending with dry ingredients.
  6. Beat egg whites with 2 T sugar until stiff.
  7. Fold the grated chocolate into the egg whites.
  8. Fold egg whites and chocolate mix into the batter.
  9. Pour into greased 9 x 9-inch pan.
  10. Bake at 350 degrees F for 25 minutes.
  11. Cool.
  12. 2ND LAYER:.
  13. Once the bottom layer has cooled.
  14. Mix confectioner’s sugar, egg yolks and butter until smooth.
  15. Spread over to cover the 1st layer.
  16. 3RD (TOP) LAYER:.
  17. Melt chocolate and butter (by whatever method you prefer).
  18. Blend well.
  19. Spread evenly over 2nd layer.
  20. Cover and refrigerate.
  21. Cut and serve once the top layer has set up.
