Tortilla Corn  Soup Recipe

INGREDIENTS

  1. 1tablespoonbutter
  2. 1tablespoonolive oil
  3. 1/2cuponions, diced
  4. 1/2cupred peppersor green peppers or yellow peppers, diced(or a mixture)
  5. 1/2-3/4cupwhite rice, to taste
  6. 1teaspooncumin
  7. 4cupschicken stock or vegetable stock(or a mix of both)
  8. 1cup preparedsalsa
  9. 1-2chipotle chile in adobo, chopped
  10. 1cupcorn
  11. 1tablespoon choppedcilantro
  12. 2tablespoonsfresh lime juice
  13. 4corn tortillas
  14. cooking spray
  15. 1teaspoonchili powder
  16. 1/2teaspooncumin
  17. garnishes

  18. crema (optional)
  19. salsa (optional)
  20. avocados, slices (optional)
  21. queso fresco (optional)
  22. chopped tomatoes (optional)
  23. onions (optional)

DIRECTIONS

  1. preheat oven to 425.
  2. on stovetop heat a large pot on med hi.
  3. add butter and oil, add onion, peppers, rice, and cumin, stirring until well coated.
  4. add stock and bring to bubbling, lower heat, cover and simmer for 10 minutes.
  5. after 1o minutes add 1 c salsa, chipoltes, and 1 c corn.
  6. cook 10 minutes more.
  7. add lime juice, cilantro and and stir.
  8. for tortilla chips:.
  9. spray a baking sheet and spray 4 tortillas with cooking spray.
  10. sprinkle with chili powder and cumin, slice into strips and bake in the oven for 5 minutes if using flour tortillas, 10 mins if using corn tortillas.
  11. place several strips over soup.
  12. garnish with crema, avocado, salsa, hot sauce, etc to taste.
