INGREDIENTS
- 1 1/2lbs freshroma tomatoes
- 3tablespoons choppedfresh basil
- 1tablespoon choppedfresh mint
- 1teaspoonsalt
- 1-2jalapeno pepper, seeded and sliced
- 1/4-1/2cupolive oil
- 1lbspaghetti, cooked as per package directions
- 8ouncesmozzarella cheese, cut into 1 inch cubes
DIRECTIONS
- Core tomatoes and sliced and cut into strips.
- In a large bowl, add tomatoes, basil, mint, salt, jalapeno peppers and olive oil.
- Set aside and allow mixture to marinade 30 minutes.
- Prepare the spaghetti as per package directions, drain thoroughly, shaking the strainer a few times.
- Pour spaghetti into the tomatoes, add cheese and toss to blend.
- Serve immediately.

INGREDIENTS
- 185g plainchocolate biscuits(crumbed)
- 90gbutter(melted)
- 500gcream cheese(softened)
- 375gcondensed milk
- 300mlcream
- 1tablespoongelatin
- 1/4cupwater(cold)
- 100gmilk chocolate
- 100gwhite chocolate
- 100gdark chocolate
DIRECTIONS
- Base: Combine butter and biscuits and press into flan dish lined with foil.
- Refrigerate while preparing filling.
- Filling: Sprinkle gelatin over water then dissolve over hot water.
- Set aside to cool.
- Beat together cream chees and condensed milk until well combined.
- Add Cream and cooled gelatin.
- Divide into three portions.
- Melt first 100g of chocolate in microwave then fold into 1st portion and spread onto base.
- Repeat steps with remaining chocolate.
- Decorate with whipped cream amd choclate curls/shavings.

INGREDIENTS
- 2ounces bakerunsweetened chocolate
- 1/4cupbutter
- 1 (14 ounce)can bordenEagle Brand Condensed Milk
- 35graham wafers
- 1teaspoonvanilla
- choppednutsor coconut(to roll in)
DIRECTIONS
- Melt the chocolate in the butter.
- Add milk, rolled wafers, and vanilla.
- Take 1 teaspoon of mixture and roll in nuts or coconut.
- Put in refrigerator to set.

INGREDIENTS
- 1gallongreen tomatoes(roughly chopped)
- 5bell peppers(roughly chopped)
- 3-10hot peppers(we like it super hot)
- 12mediumonions(roughly chopped)
- 1bunchcelery(roughly chopped)
- 1smallcabbage(roughly chopped)
- 3pints regularvinegar
- 1/2cupsalt
- 4teaspoonsturmeric
- 1teaspooncinnamon
- 3lemons, juice of
- 6cupssugar
DIRECTIONS
- Grind vegetables or pulse in food processor (Mrs. Adams ground hers, I just chop mine fine).
- Drain vegetables.
- Mix salt, spices, sugar and vinegar and heat through.
- Pour over vegetables and add lemon juice.
- Can as you normally would.

INGREDIENTS
- 1 (20 ounce)cancrushed pineapple, well drained
- 2cupsconfectioners’ sugar
- 1cup choppedpecans
- 1/8cupbutter, melted,at room temperature
- 1boxvanilla wafers
- 1 (8 ounce)containerCool Whip
- 1bag of shreddedcoconut
- 1cup shreddedcoconut
DIRECTIONS
- Mix pineapple, sugar, pecans and butter.
- Line an 8 inch square pan with vanilla wafers Pour pineapple mixture over vanilla wafers Cover pineapple mixture with another layer of vanilla wafers Cover vanilla wafers with cool whip.
- Sprinkle coconut on top of cool whip.
- Cover and refrigerate overnight.
