Jen’s Uncooked Lemon Cheesecake Recipe

INGREDIENTS

  1. Base

  2. 1 (250 g)packetplain sweet biscuits(I use ‘Nice’ biscuits)
  3. 125gbutter(melted)
  4. Filling

  5. 1 (400 g)canevaporated milk(unsweetened condensed milk , well chilled)
  6. 250gcream cheese
  7. 1cupcaster sugar
  8. 1teaspoonvanilla essence
  9. 2/3cuphot water
  10. 1-2lemon, juice of
  11. 1 (85 g)packetlemon jelly

DIRECTIONS

  1. Base:.
  2. Crush biscuits and mix with melted butter.
  3. Press into a 25cm spring form pan coming a little way up sides if desired.
  4. Bake for 10mins only at 150′C/300′F.
  5. Cool.
  6. Filling:.
  7. Dissolve the jelly inthe hot water and make up to 1 cup with the lemon juice.
  8. Beat cream cheese, sugar and vanilla essence well.
  9. Beat chilled milk until very thick in a large bowl.
  10. Add cheese & sugar mixture and beat in well.
  11. Add in the lemon jelly and beat thoroughly.
  12. Pour onto the cooled base and refrigerate overnight, or at least 8-10 hours.
  13. Decorate as desired.
  14. Variation:.
  15. For a pineapple cheesecake add a well drained medium size can of crushed pineapple.Some of the drained juice can be used with the water when making up the jelly.

Marilyn’s Uncooked Chocolate Cheesecake Recipe

INGREDIENTS

  1. For base

  2. 4ouncesmalt biscuits(or plain sweet biscuits or cookies)
  3. 1 1/2ouncesbutter(melted)
  4. For filling

  5. 8ouncescream cheese
  6. 1/2cupsugar
  7. 1teaspoonvanilla
  8. 2eggs(separated)
  9. 300mlcream
  10. 4ouncesdark chocolate(melted)
  11. 2teaspoonsgelatin
  12. 1/4cuphot water

DIRECTIONS

  1. Crumb the biscuits in a food processer and add the melted butter. Mix well.
  2. Press into the base of an 8″ spring form tin and bake at 180′C for 10 minutesRemove from oven and allow to cool while making the filling.
  3. With an electric mixer beat egg whites with 1/4 cup sugar until peaks turn over when beater is lifted.
  4. In another bowl beat cream to soft peak stage.
  5. In a large bowl beat well the cream cheese with the remaining 1/4 cup sugar and the vanilla.
  6. Add the egg yolks & melted chocolate to the cream cheese mixture and mix well.
  7. Now fold in the egg white mixture with a metal spoon.
  8. Add the gelatine which has been disolved in the hot water and mix in carefully.
  9. Lastly fold in the whipped cream.
  10. Pour into the cooled crumb crust and allow to set for about 6-8hrs or overnight in fridge.
  11. Decorate with rosettes of whipped cream and chopped nuts or curls of chocolate.
  12. Once set this cheesecake can be frozen.

Uncooked Strawberry Cookies Recipe

INGREDIENTS

  1. 2 (3 ounce)packagesstrawberry Jell-O gelatin dessert
  2. 1cup choppedpecans
  3. 1cupflaked coconut
  4. 3/4cupsweetened condensed milk
  5. 1/2teaspoonvanilla extract
  6. 1/4cup reddecorator sugar(approximate amount)
  7. slivered almonds (optional)
  8. green food coloring (optional)

DIRECTIONS

  1. Mix all ingredients together well.
  2. Shape (as best you can) to resemble strawberries.
  3. Roll in red sugar.
  4. If desired dye slivered almonds green for stems.

Torte Rolls With Uncooked Buttercream Frosting Recipe

INGREDIENTS

  1. for the cake

  2. 6eggs, separated
  3. 1 1/4cupsgranulated sugar
  4. 2tablespoonslemon juice
  5. 3/4cup siftedflour
  6. 1/4cup siftedcornstarch
  7. 1/2teaspoonsalt
  8. 2tablespoonsrumor cognac
  9. for the filling and frosting

  10. 1lbconfectioners’ sugar
  11. 1lbsweet butter
  12. 3 strictly fresh preferably pasteurizedegg yolks
  13. 1/2cupcocoa powder
  14. 1/4cup approximately boilinghot coffeeor hotmilk
  15. 1teaspoonvanilla extract
  16. 4tablespoonsrumor cognac

DIRECTIONS

  1. FOR THE CAKE:
  2. Beat egg whites until stiff.
  3. Beat egg yolks until thick.
  4. Gradually beat sugar and 1 tablespoon lemon juice into yolks.
  5. Sift in flour, cornstarch and salt.
  6. Add remaining lemon juice and beat until smooth.
  7. Fold in egg whites.
  8. Spread evenly in two 10″x15″x1″ pans lined on the bottom with waxed paper. (If only one pan is available other half of batter can wait).
  9. Bake in 375 degree oven for about 10 minutes.
  10. Turn out onto rack and peel off paper at once.
  11. Sprinkle 2 tablespoons rum or cognac over each cake.
  12. Spread on filling; roll up lengthwise; frost outside with more filling.
  13. Chill thoroughly.
  14. FOR THE FILLING:.
  15. __________________.
  16. Place confectioners sugar in large mixing bowl; cut in butter; add egg yolks and rum or cognac.
  17. Mix on low speed of electric mixer.
  18. Gradually add hot coffee or milk, a teaspoon at a time till you’ve added about 1/4 cup.
  19. Now turn mixer to high speed and let it whip for 10 minutes.
  20. More liquid can be added, if required to obtain a thick, creamy consistency.
  21. Fold in vanilla.
  22. Note:For Mocha Filling use coffee and rum; for Chocolate Filling use hot milk and cognac.
  23. You can dress ‘em up by sprinkling ground nuts on top and/or ground nuts over the filling before it’s rolled up, adding shaved chocolate, or chocolate covered coffee beans on top.

Cheese Stuffed Manicotti (Uncooked Shells) Recipe

INGREDIENTS

  1. Sauce

  2. 6tablespoonsolive oil
  3. 1garlic clove(minced)
  4. 1mediumonion(chopped)
  5. 2tablespoons snippedparsley
  6. 2 (32 ounce)canswhole tomatoes(cut up)
  7. 2 (8 ounce)canstomato sauce
  8. 1teaspoonsugar
  9. 1/2teaspoonbasil
  10. Cheese Filling

  11. 1lbricotta cheese
  12. 1/4lb gratedmozzarella cheese
  13. 1tablespoon snippedparsley
  14. 3teaspoonsparmesan cheese(grated)
  15. 2teaspoonssugar
  16. 1egg, slightly beaten
  17. Topping

  18. additionalparmesan cheese, grated

DIRECTIONS

  1. Sauce: Heatolive oil in a large saucepan.
  2. Saute onion and garlic in oil until onion is transparent.
  3. Add cut up tomatoes, tomato sauce,sugar, and basil.
  4. Simmer about 20 minutes.
  5. Filling: Mix ricotta, mozzarella, parmesan, parsley, sugar, and egg together.
  6. Assemble: Fill uncooked manicotti shells with cheese mixture.
  7. Place in a lightly greased 9 x 13 inch baking dish; cover completely with sauce.
  8. Cover and bake at 400 degrees for about 1 1/4 hours or until pasta is tender.
  9. Uncover and sprinkle with some Parmesan cheese and bake 15 minutes longer.
  10. Let sit about 15 minutes before serving.
