INGREDIENTS
- 1/4cupdesiccated coconut
- 3cupsrice bubbles
- 1/4cupglace cherries, chopped
- 110gdark chocolate chips(2×55 gram Cherry Ripe Chocolate Bars)
- 1tablespoonmargarine
- 2tablespoonsgolden syrup
- 1teaspooncoconut essence
DIRECTIONS
- Use 24 paper patty cases.
- Place coconut onto a sheet of cooking paper and place under the grill (broiler), toast until golden brown, be careful as the coconut can burn quickly. Leave to one side.
- In a large mixing bowl place rice bubbles, chopped cherries and coconut, fold together.
- Roughly chop the Cherry Ripe Chocolate Bars then place in a small microwave-safe bowl with margarine and golden syrup. Melt on high for 2 minutes, give mixture a good stir. Add coconut essence to the bowl.
- Pour into rice bubbles and fold together until ingredients are well coated.
- Spoon mixture into 24 patty cases. Refrigerate to set.

INGREDIENTS
- 1/4cupsugar (optional)
- 2teaspoonscornstarch
- 1/8teaspooncinnamon
- 1/2cuporange juice
- 2cupssweet cherries, pitted and halved(if using canned cherries, replace o.j. with juice from cherries)
- 1teaspoon gratedorange peel
DIRECTIONS
- In a medium saucepan, combine the sugar, cornstarch and cinnamon.
- Add orange juice, cherries and orange peel.
- Bring to a boil over medium-high heat and boil until thickened.
- Serve over warm pancakes or waffles.

INGREDIENTS
- 2teaspoonsextra-virgin olive oil, divided
- 1lbgreen beans, trimmed
- 1/2cupwater
- 2garlic cloves, minced
- 1 1/2cupscherry tomatoes, halved
- 1tablespoonbalsamic vinegar
- salt & pepper, freshly ground(to taste)
DIRECTIONS
- Heat 1 teaspoon oil in a large skillet over medium-high heat.
- Add green beans and cook, stirring often, until seared in spots, 2 to 3 minutes. Add water, cover, reduce heat to medium and cook, stirring occasionally, about 3 minutes for tender-crisp or 6 minutes for tender.
- Push the beans to the side; add the remaining 1 teaspoon oil and garlic and cook until fragrant, about 30 seconds.
- Add tomatoes, stir everything together and cook until the tomatoes begin to break down, 2 to 3 minutes.
- Remove from heat; stir in vinegar, salt and pepper.

INGREDIENTS
- 1cuppowdered sugar
- 1cupbutteror margarine, softened
- 2teaspoonsmaraschino cherry juice
- 1/2teaspoonalmond extract
- 3dropsred food coloring
- 2 1/4cupsflour
- 1/2teaspoonsalt
- 1/2cupmaraschino cherries, drained and chopped
- 48 chocolateHershey’s chocolate kisses, plain chocolate ones, unwrapped
DIRECTIONS
- Heat oven to 350°F.
- In large bowl, combine powdered sugar, butter, cherry juice, almond extract and food coloring; blend well.
- Lightly spoon flour into measuring cup; level off.Stir in flour and salt; mix well.Stir in cherries.Shape dough into 1 inch balls.Place 2 inches apart on ungreased cookie sheets.
- Bake at 350F for 8-10 minutes or until edges are light golden brown.
- Immediately top with chocolate kiss.
- Remove from cookie sheets.

INGREDIENTS
- 3/4cupquick-cooking oats, uncooked
- 1/2cupall-purpose flour
- 1/2cupbrown sugar, firmly packed
- 1/2teaspooncinnamon, ground
- 1/3cupbutter, cut into pieces
- 21ouncescherry pie filling
- 1/2teaspoonalmond extract

- vanilla ice cream
DIRECTIONS
- Combine first 4 ingredients.Cut in butter with a pastry blender until mixture is crumbly.
- Combine pie filling and almond extract in a greased 1 quart baking dish.Sprinkle with crumb mixture.
- Microwave, uncovered, at HIGH 6 minutes or until thoroughly heated.Top each serving with ice cream.
