INGREDIENTS
- 1/4cupplain yogurt
- 1/2teaspoonalmond extract
- 1cupground walnutsor ground pecansor ground almonds
- 1/2lbunsweetened flaked coconut
- 2 ripebananas, peeled and cut into 1/4-inch thick rounds
DIRECTIONS
- In a small mixing bowl, blend together the yogurt and almond extract.Set aside.
- Place the ground nuts and shredded coconut in separate shallow bowls.
- One at a time dip the banana slices into the yogurt, then roll them in either nuts or coconut.
- Place slices in a pan, cover, and freeze for at least 10 minutes before serving.If not eating immediately, transfer to plastic bags and keep in the freezer.

INGREDIENTS
- 3/4cupsugar
- 1tablespoonsugar
- 1/3cupcornstarch
- 1pinchsalt
- 3cupsmilk
- 8eggs, separated
- 3tablespoonsbutter
- 1tablespoonvanilla
- 3cupsvanilla wafers
- 4 ripebananas, thinly sliced
- 1/2teaspooncream of tartar
DIRECTIONS
- Preheat oven to 350°.
- In a large saucepan, combine 1/2 cup sugar, cornstarch and salt; stir until blended.
- Mix in milk.
- Cook over medium heat, stirring constantly until thickened and boiling; boil 1 minute and remove from heat.
- In a small bowl, whisk egg yolks.Then whisk in about 1/2 cup of the hot custard until blended.Pour yolk mixture back into the saucepan of custard; cook over medium heat, stirring, for 2 minutes.
- Stir in butter and vanilla until blended.
- Place vanilla wafers [these could be crushed in a large bag with a rolling pin] on the bottom of a shallow 2-quart casserole dish.
- Top with layers of banana slices and custard.
- Repeat layering, ending with custard.
- In a large mixing bowl, beat egg whites that are at room temperature with 1/4 cup sugar at low speed until frothy.Add cream of tartar; increase speed to medium and gradually beat in remaining sugar.Beat until egg whites hold stiff peaks.
- Spoon meringue over hot custard immediately, making sure the meringue touches the baking dish on all sides (this prevents shrinking).
- Transfer to oven and bake until golden, about 20 minutes.
- Remove pudding from oven and cool 1 hour.
- Refrigerate at least 4 hours before serving.

INGREDIENTS
- 1 1/4cupsbananas
- 3/4cupartificial sweetener
- 2/3cupnon-fat vanilla yogurt
- 4 1/2tablespoonsSmart Balance butter spread
- 1/2teaspoonvanilla extract
- 1/2cupEgg Beaters egg substitute
- 2 2/3cupsall-purpose flour
- 3/4teaspoonbaking powder
- 1teaspoonbaking soda
- 1/4teaspoonsalt
DIRECTIONS
- Preheat oven to 350º F. Lightly grease a dozen muffin tins or line with paper cups.
- Mix bananas, sugar, yogurt, smart balance, vanilla, and egg beaters together in a large mixing bowl and stir until smooth.
- In another bowl sift together flour, baking powder, baking soda, and salt.
- Add flour mixture to banana mixture and stir until just combined.
- Fill muffin cups three-quarters of the way full and bake for 25 to 35 minutes.
- Check for doneness with a toothpick or by pressing lightly on the top.

INGREDIENTS
- 3largebananas, mashed
- 1/2cupartificial sweetener
- 1/4cupEgg Beaters egg substitute
- 1teaspoonbaking soda
- 1teaspoonbaking powder
- 1cupwhole wheat flour
- 1/2cuprolled oats
- 1/3cupunsweetened applesauce
- 1/2teaspoonsalt
- 1/2cupdark chocolate chips
DIRECTIONS
- Preheat oven to 350°.
- Mash bananas and then add sugar, egg beaters and applesauce. Mix well.
- In another bowl mix flour, oats, baking powder, baking soda and salt.
- Gradually add flour mixture to banana mixture and mix gently.Fold in chocolate chips.
- Fill muffin tins 3/4 full. Number of muffins will depend on whether you use a mini tin or regular size. We like the mini muffins, so easy to pop into your mouth and enjoy! I also use liners to prevent sticking.
- Bake for 20-25 minutes.

INGREDIENTS
- 1cupoil
- 2cupssugar
- 2eggs, beaten
- 6-8 ripebananas, mashed
- 2teaspoonsvanilla extract
- 2 1/2cupsself-rising flour
- 1cup choppednuts (optional)
DIRECTIONS
- In a large mixing bowl, mix the oil and sugar.
- Add remaining ingredients and mix well.
- Pour into 2 greased 9×5 loaf pans and bake 55-60 minute in a 375 oven.
- Cool on racks.
- This recipe is also great for mini muffins and regular size muffins.
