INGREDIENTS
- 2cupsplain flour
- 1teaspooncinnamon
- 1/2teaspoon gratedfresh nutmeg
- 1/4teaspoonground cloves
- 1teaspoonsalt
- 1teaspoonbaking soda
- 3largeeggs
- 1 1/4cupssunflower oil
- 1 3/4cupscaster sugar
- 1tablespoon purevanilla essence
- 3/4cup coarsely chopped toastedpecan nuts
- 3ounces goodchocolate, broken into chip size pieces(I favour Green and Blacks)
- 3 ripebananas, peeled and diced

CARAMEL TOPPING
- 1 1/4cups of firmly packed softlight brown sugar
- 1tablespoonmilk
- 1tablespoondouble cream
- 4tablespoonsunsalted butter, cut into pieces
DIRECTIONS
- Pre-heat the oven to 180*C/350*F. Grease and flour a 12 cup tube or bundt pan, shaking out all the excess flour.
- Sift together the flour, cinnamon, nutmeg, cloves, salt and baking soda. Set aside. Beat together the eggs, caster sugar and oil with your electric beaters on medium speed until the sugar is totally emulsified, about 2 to 3 minutes. Beat in the vanilla essence. Slowly beat in the dry ingredients, scraping down the bowl to make sure it all gets mixed in well. Fold in the pecan nuts, chocolate and banana chunks very carefully with a rubber spatula taking care not to mush the bananas up. Scrape into the prepared pan.
- Bake for 50 minutes. Test with a wooden skewer to see if it is done. It should come out clean if it is. If not, bake for an additional 5 to 10 minutes.
- In the meantime combine all the topping ingredients in a small saucepan over low heat and cook until the butter and sugar are melted and it begins to boil. Simmer for about 10 minutes while you are waiting for the cake to finish.
- Remove the cake from the oven and poke holes all over the hot cake (without removing from pan) and spoon the caramel glaze over the top, stopping every now and then to let the cake absorb it. If it starts to pool, poke some more holes in the cake. Let cook completely in the pan on a wire rack before removing and unfolding it onto a plate. I then put another plate on top and flip it over until the flat side is on the top again. Delicious!

INGREDIENTS
- 2cupsall-purpose flour
- 1/4cupsugar
- 1tablespoonbaking powder
- 1/2teaspoonsalt
- 1cupmilk
- 1egg, beaten
- 1cupwater
- 1/3cupvegetable oil
- 3/4cup mashedbananas
- 1/2cup choppedwalnuts
DIRECTIONS
- Preheat oven to 400 degrees.
- Grease a 12-cup muffin pan. Sift flour, sugar, baking powder and salt into a medium bowl; make a well in center.
- Mix milk, egg, water, oil, banana and walnuts in a small bowl. Pour mixture into well.
- Mix batter just until moistened; do not overmix.
- Spoon batter into prepared muffin cups. Bake until a toothpick in the center comes out clean or until muffins are golden brown, about 15 minutes.

INGREDIENTS
- 3medium very ripebananas
- 1cupsugar
- 3teaspoonsbaking soda
- 1dashsalt
- 2eggs
- 1/4cupvegetable oil
- 1 1/2cupsflour
- 1/2cupbuttermilk
DIRECTIONS
- Puree bananas for 15-20 seconds in a food processor.
- Add sugar, soda and salt.
- Process for 20 seconds.
- Add eggs and oil;blend.
- Add flour, process for 20 seconds.
- Add buttermilk and process until smooth.
- Spray a 9×5 inch loaf pan.
- Pour in batter.
- Bake in the middle of the oven a 275 degrees for 1 1/2 to 2 hours or until done, (long baking time at low temp is correct).

INGREDIENTS
- bananas
- 1 1/2cupschocolate chips
- 1 1/2cupsM&M’s
- 1 1/2cupsReese’s pieces
- 1 1/2cupsmini marshmallows
- 3/4cuppeanut butter
- 1 1/2cupspecans, chopped
- 1 1/2cupspeanuts, chopped
DIRECTIONS
- Place half of a banana on foil. Slice from end to end.
- Place 1/4 cup chips, marshmallows, m&m’s, reese’s pieces, and peanut butter on top of banana.
- Wrap loosely with foil.
- Repeat with more bananas.
- Place on barbecue 3-5 minutes until candies and marshmallows melt.
- Top with whipped cream or ice cream, pecans and peanuts.
- Note: These may be done in the oven at 400 degrees for 8 minutes.

INGREDIENTS
- 1/2cupsugar
- 1/2cupbrown sugar, packed
- 2eggs
- 1teaspoonvanilla
- 4-5bananas, mashed
- 1 1/2cupsflour
- 1teaspoonbaking powder
- 1teaspoonbaking soda
- 1teaspooncinnamon
- 1/2teaspoonnutmeg
- 1/2teaspoonsalt
- 1/4-1/2cupnuts, chopped
- 1/2-3/4cupbrown sugar, packed
- 1/4cupnuts, chopped
DIRECTIONS
- Cream together first 4 ingredients.
- Add bananas.
- Add dry ingredients to creamed mixture; mix just until well blended.
- Fill muffin cups (greased or paper lined) 3/4 full.
- Sprinkle with topping, last 2 ingredients.
- Bake @ 350* for 15-17 minute.
- Variation:You can make mini loaves instead~~bake 15-17 minute. (makes about 12).
