- 1/3cupbutter, softened
- 1lemon, zest of
- 1egg, beaten
- 4tablespoonslemon juice
- 3cupsall-purpose flour
- 1teaspoonbaking powder
- confectioners’ sugar, for dusting
- Preheat oven to 325F.
- Lightly grease several cookie sheets In a mixing bowl, cream together the butter, sugar, and lemon rind until pale and fluffy Add the beaten egg and lemon juice a little at a time, beating well after each addition Sift the flour and the baking powder into the creamed mixture and blend together.
- Add the milk and mix to form a soft dough Pour the dough onto a lightly floured surface and divide into 5 equal pieces Roll each piece into a tube and shape into an”S” shape Place on the prepared cookie sheet and bake for 15-20 minutes.
- Let cool on a wire rack.
- Heavily dust with confectioner’s sugar.
