Stir Fried Chicken and Broccoli Recipe

INGREDIENTS

  1. 1/2lbchicken breasts, boned and skinned
  2. 1lbfresh broccoli
  3. MARINADE FOR CHICKEN

  4. 2teaspoonscornstarch
  5. 2teaspoonssoy sauce
  6. 1teaspoondry sherry
  7. 2teaspoonswater
  8. THICKENING SAUCE

  9. 2teaspoonscornstarch
  10. 2teaspoonssoy sauce
  11. 4tablespoonswater
  12. 1/4teaspoonsesame oil
  13. 5tablespoonsoil
  14. 3/4teaspoonsalt
  15. 1clovegarlic, smashed and peeled
  16. 2green onions, cut into 1 inch pieces
  17. cooked rice, to serve with meal

DIRECTIONS

  1. TO PREPARE AHEAD:.
  2. Slice chicken across the grain into pieces 1/8 inch thick.
  3. Toss chicken and marinade in a bowl.
  4. Mix well.
  5. Let stand 30 minutes.
  6. Wash and drain broccoli and cut into bite size pieces.
  7. Mix ingredients for thickening sauce in a small bowl.
  8. TO COOK: Heat 2 tablespoons oil in wok or frying pan over high heat.
  9. Add broccoli and salt and stir fry for 4 minutes.
  10. (Add a teaspoon of water if it gets too dry.) Transfer to a plate.
  11. Wipe out the wok or pan with a paper towel.
  12. Pour in 3 tablespoons oil.
  13. When hot add chicken, garlic and green onions.
  14. Stir fry until chicken is cooked firm and white, about 4 to 5 minutes.
  15. Return broccoli to wok and add thickening sauce.
  16. Stir until thick.
  17. Serve with rice.
