Spiced Tomato Dipping Sauce – Moroccan Style Recipe

INGREDIENTS

  1. 1/3cuponions, finely chopped
  2. 1clovegarlic, finely chopped
  3. 1 1/2teaspoonsfresh ginger, peeled and finely chopped
  4. 3/4teaspooncumin
  5. 1/2teaspoonhot paprika
  6. 1/4teaspooncinnamon
  7. 1pinchcayenne
  8. 1pinchground cloves
  9. 1tablespoonolive oil
  10. 1 1/2tablespoonscider vinegar
  11. 1 (15 ounce)cantomatoes, coarsely chopped(reserve juice)
  12. 2tablespoonsbrown sugar

DIRECTIONS

  1. Saute onion, garlic, ginger and spices in olive oil in large saucepan over moderately low heat.
  2. Stir frequently until onion is softened, about 4 minutes.
  3. Stir in vinegar and simmer over moderately low heat about 1 minute.
  4. Add tomatoes with juice and brown sugar.
  5. Increase heat slighly and simmer, stirring occasionally until slightly thickened, about 30 minutes.
  6. Cool slightly.
  7. Puree sauce in blender or food processor until smooth.
  8. Be careful when blending hot liquids.
  9. Serve at room temp or slightly warmer.
