South Beach Style Tuna Salad With Lowfat Cilantro Mayo Recipe
INGREDIENTS
- 1 (3 ounce)package of fresh packedalbacore tuna or lightchunk tuna(water packed not oil packed)
- 1clovegarlic, crushed
- 1/4cup choppedfresh cilantro
- 1 1/2teaspoonsreduced-fat mayonnaiseor light mayonnaise
- 1teaspoonspicy brown mustard
- 1tablespoonfresh lemon juice
- 1-2dashFrank’s red hot sauce
- 1/4teaspooncreole seasoning (optional)
- salt & fresh ground pepper
- 1cupmixed salad greens
- 6cherry tomatoes, halved
- 1-2teaspoonbalsamic vinegar
DIRECTIONS
- Place salad greens in bowl and top with tomatoes.
- In a separate bowl, mix tuna, garlic, cilantro, mayo, brown mustard, lemon juice, hot sauce and creole seasoning (if desired), salt and pepper to taste.
- Mix well.
- Mound tuna mixture on top of salad greens.
- Drizzle with balsamic vinegar and serve.
