Shrimp/prawns and Olives Salad. Recipe

INGREDIENTS

  1. 3/4lb cooked and peeledlarge shrimpor prawns
  2. 1/4cupblack olives
  3. 1/4cupgreen olives
  4. 2tablespoons redpimientos, chopped (optional)
  5. 1/4cup choppedgreen onions(scallions)
  6. 2hard-boiled eggs, chopped(remove yolks if desired)
  7. 1/2cupmayonnaiseor Miracle Whip
  8. 1tablespoonolive juice
  9. 1tablespoonpickle juiceor olive juice

DIRECTIONS

  1. Remove tails from prawns or shrimp and cut each one in half or thirds, depending on the size.
  2. Add the olives, onions and eggs.
  3. Mix the Mayonnaise, pickle juice and olive juice together in a cup or small bowl.
  4. Stir the Mayonnaise mixture into the prawn/shrimp mixture and mix well.
  5. Cover and refrigerate at least 1 hour before serving.
  6. Serve with crackers.
