Scallop Casserole Recipe

INGREDIENTS

  1. 1 1/2lbslarge scallops, rinsed
  2. 8ounceslow-fat Ritz crackers
  3. 1/2cupbutter, melted
  4. 8ounceslow-fat cheese, shredded
  5. parsley

DIRECTIONS

  1. Preheat over to 400 degrees.
  2. Stir crackers into melted butter.
  3. Place scallops into large round casserole.
  4. Sprinkle cheese over top, then parsley.
  5. Pour melted butter and Ritz over top.
  6. Bake covered for 15 minutes, uncovered 15 minutes until bubbling and golden brown.
  7. Be sure it is a stick of butter, a sleeve of ritz, Italian blend cheese.
