Salsa Beef Recipe

INGREDIENTS

  1. 1(2-3 lb)boneless beef shoulder or rump roast(I used chuck)
  2. 1tablespoonoil
  3. 1cupmild salsa
  4. 2tablespoonsbrown sugar
  5. 1tablespoonsoy sauce
  6. 1teaspoon fresh mincedgarlic
  7. 3tablespoons choppedcilantro leaves
  8. 1tablespoonlime juice

DIRECTIONS

  1. Trim fat from beef and cut into bite-size cubes.
  2. Heat oil in a large Dutch oven and brown meat in batches.
  3. Pour off drippings.
  4. Add salsa, brown sugar, soy sauce and garlic.
  5. Bring to a boil, then reduce heat to low.
  6. Cover and simmer 1 hour or longer.
  7. Remove lid and continue cooking for an additional 30 minutes.
  8. Remove beef from heat and add cilantro and lime juice.
