Sai Bhaji Recipe

INGREDIENTS

  1. 400gspinach
  2. 1mediumpotato
  3. 1onion
  4. 50gwhite pumpkinor red pumpkins
  5. 50gbrinjalor eggplants
  6. 50gchickpeas, soaked for 2 hrs(chanadal)
  7. 3clovesgarlic
  8. 1/2inchginger
  9. 2tomatoes
  10. 2green chilies
  11. 1teaspoonturmeric powder
  12. 1tablespooncoriander powder
  13. 2tablespoonsoil
  14. salt
  15. 2tablespoonstamarind juice

DIRECTIONS

  1. chop all the veggies into medium sized peices.
  2. put all the chopped vegetables together with all the spices and oil and half a cup water in a pressure cooker and cook for 10 minutes or untill all the veggies are cooked and soft.
  3. remove from fire and allow to cool a little.
  4. using the back of a wooden spoon, mash all the vegetables and the dal and the spinach untill they become a fine paste (no blender).
  5. put it back on heat and add the tamarind juice.
  6. mix well and serve hot with”bhuga chawar”.
