Rhubarb Slush Recipe

INGREDIENTS

  1. 8cupsfresh rhubarb or frozen rhubarb, chopped fine
  2. 4cupswater
  3. 2cupssugar(or less if you like it tart)
  4. 1canfrozen raspberry juice concentrate(undiluted)
  5. 4cupsvodkaor gin

DIRECTIONS

  1. Bring the rhubarb, water and sugar to a boil, and then simmer for 7 minutes or until rhubarb is tender.
  2. Strain the juices off and let cool.
  3. Add the can of raspberry juice and gin/vodka.
  4. Freeze.
  5. To serve add two huge scoops of slush and top with gingeral, sprite or 7 up.
  6. Enjoy!
