REDEYE GRAVY and BBQ Sauce Recipe

INGREDIENTS

  1. 1tablespoonbutter
  2. 4slicesbacon(finely chopped)
  3. 1/2mediumonion(finely chopped)
  4. 2clovesgarlic(minced)
  5. 3/4cup strong blackbrewed coffeeor espresso
  6. 3/4cupketchup
  7. 1/4cupworcestershire sauce
  8. 2tablespoonsDijon mustard
  9. 2tablespoonsmolasses
  10. 2tablespoonsdark brown sugar
  11. coarse salt, to taste
  12. fresh ground black pepper, to taste

DIRECTIONS

  1. Melt butter in heavy saucepot over medium heat.
  2. Add the bacon, onion and garlic and cook until lightly browned, about 3 minutes.
  3. Stir in the coffee, ketchup, worchestershire sauce, mustard, molasses and brown sugar and allow the mixture to gradually come to a boil.
  4. Reduce heat slightly, and allow the sauce to simmer until thick and richly flavored, about 10 to 15 minutes, whisking from time to time.
