Pickled Jalapeno Salsa Recipe

INGREDIENTS

  1. 1mediumonion, cleaned and quartered
  2. 1/2-3/4cuppickled jalapeno chilies, reserve juice
  3. 8mediumtomatoes
  4. 1tablespoonchili powder
  5. 2teaspoonscumin
  6. 1teaspoonsalt
  7. 1/2teaspoongarlic powder
  8. 1teaspoonsugar
  9. 1teaspoonpepper

DIRECTIONS

  1. I cut the tomatoes in half and gently squeeze to remove some of the seeds.
  2. In a food processer, add onion, and jalapeno w/juice.
  3. Process.
  4. Add tomatoes.
  5. Process.
  6. Add all spices.
  7. Process and refrigerate several hours.
  8. This is the time where I taste and add what I think it might need.
  9. But remember, flavors blend while in the frig.
  10. so be careful.
  11. You can also can this if you have many tomatoes in your garden as I did.
  12. Process, then cook on stove 30-45 min and process in a water bath for 10 minute Follow directions for cleaning jars and lids.
