Pesto Squash Recipe

INGREDIENTS

  1. 1/2cupfresh basil
  2. 1clovegarlic, minced
  3. 2tablespoonsolive oil
  4. 1tablespoonwalnuts
  5. 1tablespoonparmesan cheese
  6. 2largesummer squash, sliced 1/4 inch thick(yellow or zucchini)
  7. 1tablespoonolive oil
  8. 1/4cupfresh mushrooms, sliced
  9. 1/4cuponions, sliced

DIRECTIONS

  1. To make the pesto, place the basil, garlic, two tablespoons olive oil, walnuts and parmesan cheese in a food processor.
  2. Pulse until a coarse paste forms; set aside.
  3. Heat the one tablespoon of olive oil in a skillet.
  4. Add the squash, onion and mushrooms.
  5. Cook until just soft.
  6. Toss in the pesto.
  7. Check the seasonings.
  8. Serve warm.
