Orange Glazed Halibut Recipe

INGREDIENTS

  1. 2lbshalibut steaks(North Pacific)
  2. water, as needed
  3. salt, to taste
  4. 1slicelemons
  5. 1sliceonions
  6. 1sprigfresh parsley
  7. 1/4teaspoontarragon
  8. Sauce

  9. 4teaspoonscornstarch
  10. 2tablespoonsbrown sugar
  11. 1/4teaspoonsalt
  12. 3dashesTabasco sauce
  13. 1tablespoonbutter
  14. 1 1/4cupsorange juice
  15. 2tablespoonslemon juice
  16. 1orange, peeled and in sections

DIRECTIONS

  1. Boil some water (you will need enough to cover the fish)- once it has boiled, add some salt to taste.
  2. Put halibut into a large skillet and cover with boiling salted water.
  3. Place lemon, onion, parsley, and tarragon on top, cover and simmer 8-10 minutes or until halibut is just beginning to flake when poked with a fork (don’t overcook).
  4. Meanwhile, combine cornstarch, brown sugar, salt, Tabasco, and butter in a small pan for the sauce.
  5. Add orange juice and lemon juice and cook and stir until thickened and clear.
  6. Add orange sections and heat through, then serve over fish.
