Odessa-style Mushrooms in Sour Cream Recipe

INGREDIENTS

  1. 3 1/2ouncesunsalted butter
  2. 4scallions, finely chopped
  3. 1lbbutton mushrooms or chestnutmushrooms, wiped and patted dry
  4. 1tablespoonflour
  5. salt & freshly ground black pepper
  6. 4fluid ouncessour cream
  7. 3fluid ouncesdouble cream
  8. 2ounces gratedcheddar cheeseor caerphilly cheeseor lancashire cheese

DIRECTIONS

  1. Melt 2 oz of butter in a frying pan over a medium heat.
  2. Add the scallions and saute briefly.
  3. Stir in the mushrooms and continue to cook for 5-6 minutes until the mushrooms are soft and getting brown.
  4. In a small bowl combine 1/2 oz butter with the flour, working it to a paste.
  5. Stir this paste into the mushrooms and cook for 3 minutes.
  6. Add the Cream.
  7. Season to taste.
  8. Place the mushrooms into a casserole.
  9. Sprinkle the cheese and the remaining butter on top.
  10. Cook in a preheated oven for 20-25 minutes.
