Mom’s Potato Salad Recipe

INGREDIENTS

  1. 5largepotatoes
  2. 5hard-boiled eggs
  3. 2stalkscelery, chopped
  4. 1/2-1cupcucumbers, chopped
  5. 8ouncesdill relish
  6. 1 1/2cupsmayonnaise, divided
  7. 1tablespoonprepared mustard
  8. 1teaspoondry mustard
  9. 1/2teaspoongarlic powder
  10. 1teaspoonsalt
  11. 1/2teaspoononion powder
  12. 1/4teaspoonpepper
  13. basil

DIRECTIONS

  1. Boil eggs, refrigerate overnight.
  2. Peel potatoes, boil until tender, set aside to cool.
  3. While potatoes are cooling, peel and chop eggs, add 2TBL Mayonaise.Blend together until smooth.
  4. Once potatoes are cooled, dice them into 1/4 inch cubes.
  5. In a large mixing bowl, add potatoes, egg mixture, dill relish, celery, cucumbers.Toss.
  6. In small mixing bowl, add mayonaise, prepared mustard, Salt, Garlic powder, Onion Powder, dry mustard and basil. Mix well and pour over potatoe and egg mixture.
  7. Stir together until mixed well.
  8. Refrigerate at least 4 hours before serving.
