Minestrone Soup With Sausage Recipe
INGREDIENTS
- 2lbsItalian sausage
- 2tablespoonsolive oil
- 1mediumonion, peeled and diced
- 1/2lbcarrots, peeled and chopped into coins
- 2smallzucchini, halved and sliced about 1/4-inch thick
- 1 (16 ounce)candiced tomatoes with juice
- 1/4headcabbage
- 1/2teaspoon mincedgarlic
- 1 1/2teaspoonsdried basil
- 1/2teaspoonground black pepper
- 2bay leaves
- 1 1/2teaspoonsparsley flakes
- 3teaspoonsbeef base
- 10cupswater
- 2 (15 ounce)cans whitecannellini beans
- 1cup drysmall shell pasta
- gratedparmesan cheese (optional)
- romano cheese, for topping each bowl (optional)
DIRECTIONS
- In a large, nonstick skillet, brown sausage over medium heat 5-7 minutes, stirring.

- In a soup pot, cook the onion in the olive oil over medium heat until soft, about.

- Cook until the pasta is done, about 10-12 minutes.
- Serve, or reduce heat to low and simmer until ready to eat.
- Serve each bowl topped with grated Romano or Parmesan cheese.
