Mexican Fiesta Fish Recipe

INGREDIENTS

  1. 1 1/2lbscodor tilapia fillets
  2. 1cupsalsa
  3. 1cup shreddedsharp cheddar cheeseor colby-monterey jack cheese
  4. 1/2cup coarsely crushedcorn chips
  5. avocados, peeled,pitted and sliced,as garnish (optional)
  6. sour cream, as garnish (optional)
  7. green chilies, as garnish (optional)
  8. ripe olives, as garnish (optional)

DIRECTIONS

  1. Lay the fish fillets in a single layer in a greased 8″x12″ baking dish.
  2. Pour the salsa over the top, and then sprinkle evenly with the shredded cheese.
  3. Top everything with the crushed corn chips.
  4. Bake, uncovered, at 400°F for 15 minutes, or until fish is opaque and flakes with a fork.
  5. Serve with choice of garnish: sliced avocado, green chiles, olives and sour cream.
