- 1 (14 1/2 ounce)can dicedtomatoes with onion and garlic(undrained and cold)
- 1cupvegetable juice(cold)
- 3/4cup peeled and seededcucumbers, chopped
- 1/2cupgreen peppers, chopped
- 1/3cupgreen onions, chopped
- 1tablespoonred wine vinegar
- 1-3clovegarlic, minced
- 1/8teaspoonhot sauce
- 1/8teaspoonground pepper
- 12 fat freecroutons
- Mix the first 11 ingredients together in a bowl.
- Check the consistency, adding a tiny bit more vegetable juice if you prefer it thinner.
- Let chill for 30 minutes to 2 hours.
- Ladle 1 cup soup into a bowl and top with 3 croutons.
