Lightly Spiced Pork and Green Beans Recipe

INGREDIENTS

  1. 2tablespoonsvegetable oil
  2. 1mediumwhite onion, chopped
  3. 100gfrozen peas or green beans, trimmed and chopped
  4. 300gground porkor pork fillets
  5. 2teaspoonspaprika(smoked is nice)
  6. 2teaspoonsground cumin
  7. 250mlchicken stockor chicken broth
  8. 1tablespoonGreek yogurt
  9. salt and pepper, to taste

DIRECTIONS

  1. Heat the oil in a large, non-stick frying pan.
  2. Add the chopped onion.
  3. If you are using fresh beans add them now.
  4. Sauté for 2-3 minutes.
  5. Add the pork and stir fry for 3-4 minutes until it starts to brown.
  6. Add the spices and mix in with the other ingredients in the frying pan for about 30 seconds.
  7. Add the chicken stock and the frozen peas or frozen beans, if you are using them.
  8. Let simmer for 3-4 minutes until the liquid is reduced by about half.
  9. Take off the heat and stir in the yogurt.
  10. Season to taste and serve with rice, pasta or potatoes.
