Light Chicken Fried Steak Recipe

INGREDIENTS

  1. 12ouncesbeef round steak, 3/4 inch thick,trimmed and cut into 4 pieces.
  2. 2tablespoonsflour
  3. 1/4teaspoonpepper
  4. nonstick cooking spray
  5. 1cupwater
  6. 1teaspoonbeef bouillon granules
  7. 6ouncesevaporated skim milk
  8. 1tablespoonflour

DIRECTIONS

  1. Mix together 2 tablespoons flour and pepper.
  2. Pound into meat with a meat cleaver.
  3. Spray a large skillet with nonstick cooking spray.
  4. Heat to medium and brown beef on both sides.
  5. Drain off fat if needed.
  6. Add water and boullion to skillet and bring to a boil.
  7. Reduce heat and simmer, covered 1 1/4 hours until meat is tender.
  8. Remove meat and keep warm.
  9. In a bowl, gradually add skim milk to the flour and whisk until smooth.
  10. Stir into the pan juices.
  11. Cook until thickened and bubbly, and cook an additional minute.
  12. Serve over meat.
