Lentil Bolognese. Recipe

INGREDIENTS

  1. 1onion, chopped
  2. 2garlic cloves, crushed
  3. 2carrots, coarsely grated
  4. 2celery ribs, chopped
  5. 45mlolive oil
  6. 115gred lentils
  7. 1 (400 g)canchopped tomatoes
  8. 30mltomato puree
  9. 450mlvegetable stock
  10. 15mlfresh marjoram, chopped
  11. salt & fresh ground pepper

DIRECTIONS

  1. In a large saucepan gently fry the onion, garlic, carrots and celery in the olive oil until they are soft.
  2. Add the lentils, tomatoes, tomato puree, stock, marjoram and seasoning.
  3. Bring the mixture to the boil then partly cover with a lid and simmer for 20 minutes until thick and soft.
  4. Use the Bolognese as required.
