Lailah’s Crab Soup Recipe

INGREDIENTS

  1. 1/2cupunsalted butter
  2. 1cuponions(chopped)
  3. 2clovesgarlic(minced)
  4. 1/4cupflour
  5. 2 (8 ounce)bottlesclam juice
  6. 2cupschicken broth
  7. 1 (17 ounce)cancorn(drained)
  8. 1/4teaspoonthyme
  9. 1teaspoonsalt
  10. 1/2teaspoonblack pepper
  11. 1/4teaspooncayenne pepper
  12. 2cupswhipping cream(1 pint)
  13. 18ounces fancycrabmeat(3 cans)
  14. 1/4cupgreen onions(chopped)

DIRECTIONS

  1. Melt butter in soup pan on medium.
  2. Saute onion and garlic about 5 minutes.
  3. Add flour and stir until blended about 3-4 minutes, stirring all the while.
  4. Stir in clam juice and chicken broth, bring to boil, add corn, thyme, salt, pepper, and cayenne pepper-reduce heat and let simmer 25 minutes-cook uncovered.
  5. Stir in cream-cook 10 minutes- add crab and green onions-cook for 5 more minutes and serve hot.
