Joanne Woodward’s Zucchini Bread Recipe

INGREDIENTS

  1. 3cupsflour
  2. 1teaspoonbaking soda
  3. 1teaspoonbaking powder
  4. 1teaspoonground cinnamon
  5. 1teaspoonsalt
  6. 3eggs
  7. 1cupsugar
  8. 1cupoil
  9. 1teaspoonvanilla
  10. 2cups gratedzucchini

DIRECTIONS

  1. Sift flour, baking soda, baking powder, cinnamon& salt together.
  2. Beat eggs until foamy.
  3. Add sugar, oil, vanilla and sifted dry ingredients a little at a time; the mixture will be thick.
  4. Add the zucchini; the mixture will be gummy.
  5. Pour into 2 well-greased 8 1/2″ x 4 1/2″ x 2 1/2″ loaf pans and bake at 350 degrees for 1 hour.
  6. Check at 50 minutes; if a toothpick comes out clean, bread is done.
  7. Great served hot or cold.
  8. May be frozen.
