Jalapeno-cheese Cornbread (low-fat) Recipe
INGREDIENTS
- 1 1/4cupscornmeal
- 3/4cupall-purpose flour
- 2 1/2teaspoonsbaking powder
- 1/2teaspoonsalt
- 1-2packageartificial sweetener
- 1cupbuttermilk, plus
- 2tablespoonsbuttermilk
- 1egg
- 1cupfrozen corn
- 1-2tablespoon choppedpickled jalapeno peppers
- 1/3cupextra-sharp cheddar cheese
- Pam cooking spray
DIRECTIONS
- Preheat oven to 400*.
- Spray muffin tin with Pam.
- Combine all dry ingredients.
- Add corn, cheese, jalapeno and stir to distribute.
- Add buttermilk and beaten egg.
- Mix just until combined and moistened.
- Pour into muffin tins.
- Bake 20-25 min or until brown on top.
