Herb Crusted Roast Pork Recipe

INGREDIENTS

  1. 2tablespoonsapricot jam
  2. 2lbspork loin, skin and fat cut off
  3. 2ouncesfresh breadcrumbs(dried may be used)
  4. 2ouncesporridge oats
  5. 1tablespoonthyme(or leaves from 3 sprigs fresh)
  6. 2tablespoonsolive oil
  7. salt and pepper, to taste

DIRECTIONS

  1. Preheat oven to 200C/400°F.
  2. Brush the jam all over the pork loin.
  3. In a shallow dish, mix together the breadcrumbs, oats and thyme.
  4. Roll the pork in the mixture to cover it and place the pork into a baking dish.Press any excess breadcrumb mixture over the pork that may have fallen off.
  5. Drizzle with the olive oil and season with salt and pepper.
  6. Roast for 1 1/4 hours until cooked through.Leave to rest, uncovered for 10 minutes.
  7. Slice and serve.
