Hearty Lamb Pilaf Recipe

INGREDIENTS

  1. 1lbground lamb
  2. 2largeonions, chopped
  3. 2clovesgarlic, minced
  4. 3 (10 3/4 ounce)canscondensed chicken broth, undiluted
  5. 2 (28 ounce)canswhole tomatoes, undrained and quartered
  6. 2cups uncookedbrown rice
  7. 1teaspoondried oregano
  8. 1 (10 ounce)packagefrozen English peas
  9. 1/2cupraisins
  10. 1 (4 ounce)jardiced pimentos, undrained
  11. salt and pepper

DIRECTIONS

  1. Add lamb, onion, and garlic to a large pot; stir/cook until the lamb is browned and the onion is softened.
  2. Add in the chicken broth, tomatoes, rice, and oregano; bring mixture to a boil.
  3. Lower the heat and simmer, uncovered, for 40 minutes; stir every now and again.
  4. Add in the remaining ingredients; stir to combine.
  5. Simmer, uncovered, for 40 minutes, stirring every now and again.
