Ham and Broccoli Roll-ups Recipe

INGREDIENTS

  1. 8slicesswiss cheese
  2. 8slicesham(rectangular sliced lunchmeat)
  3. 2 (10 ounce)packagesbroccoli stems, steamed and drained
  4. 1tablespoonbutteror margarine
  5. 1tablespoonflour
  6. 1/4teaspoonsalt(I omit the salt)
  7. 1tablespoonprepared horseradish
  8. 2teaspoonsmustard
  9. 1/2teaspoonWorcestershire sauce
  10. 1/2teaspoon gratedonions
  11. 2egg yolks, beaten
  12. 1cuppineapple juice
  13. 1/2cupmilk

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Place one slice of cheese on top of each slice of ham; top with 1 to 2 spears of broccoli and set aside.
  3. In medium saucepan, melt butter, blend in flour, salt horseradish, mustard, Worcestershire and onion.
  4. Combine egg youlks and pineapple juice; gently stir into butter mixture.
  5. Stir in milk and cook over low heat, stirring constantly until thick and bubbling.
  6. Spoon 1 tablespoon sauce over broccoli; roll ham and cheese around broccoli and secure with wooden toothpick.
  7. Place roll-ups in baking dish; cover and cook at 350 degrees for 25 to 30 minutes.
  8. Spoon remaining hot mustard sauce over ham rolls just before serving.
