Grilled Fish on Skewers Recipe

INGREDIENTS

  1. 700g thick firmwhite fish fillets, cut into 1 inch cubes(such as monkfish or cod)
  2. 1/2onion, very finely chopped
  3. 2clovesgarlic, finely chopped
  4. 2tablespoonsfresh coriander, chopped
  5. 2tablespoonsflat leaf parsley, chopped
  6. 1/2teaspoonpaprika
  7. 1/4teaspooncayenne pepper
  8. 1pinchsaffron
  9. 1teaspoonsalt
  10. 2tablespoonsolive oil
  11. 1tablespoonlemon juice

DIRECTIONS

  1. In a bowl mix all ingridients apart from the fish.
  2. Add the fish to the marinade and make sure it is coated all over.
  3. Leave to marinate for at least two hours, stirring from timt to time.
  4. Divide the fish onto four skewers (Tip: If you use bamboo ones soak them in water beforehand to stop them from burning).
  5. Place under a hot grill or onto the bbq and leave for about 8 minutes or untill cooked through.
  6. Turn only once.
