Greek Baked Prawns (Shrimp) Recipe

INGREDIENTS

  1. 2tablespoonsolive oil
  2. 1mediumonion, chopped
  3. 1teaspoonfennel seeds
  4. 3green onions, sliced
  5. 3garlic cloves, crushed
  6. 6tomatoes, diced
  7. 1/2cupdry white wine
  8. 1teaspoondried oregano
  9. 20 shelled and deveinedgreen shrimp
  10. 1 (400 g)canwhite beansor borlotti beans, drained
  11. 4tablespoons choppedparsley
  12. salt & freshly ground black pepper
  13. 60gfeta cheese

DIRECTIONS

  1. Preheat oven to 220dC.
  2. Heat oil in an ovenproof pan and cook onion and fennel seeds for 4 minutes on medium heat.
  3. Add spring onions and stir well.
  4. Add garlic, tomatoes, wine and oregano and simmer for 10 minutes.
  5. Stir in prawns, the drained white or borlotti beans and half the parsley.
  6. Season with salt and pepper and dot with feta.
  7. Cook in the preheated oven until the prawns are cooked (about 10 minutes).
  8. Sprinkle with remaining parsley and serve.
