Grandmother Paul’s Fried Chicken Recipe

INGREDIENTS

  1. salt(to taste)
  2. pepper(to taste)
  3. 2 1/2lbsroasting chickens, cut into pieces(use a small chicken)
  4. peanut oil, for frying
  5. 3eggs, beaten
  6. 1/3cupwater
  7. 2cupsself-rising flour
  8. 1teaspoonblack pepper

DIRECTIONS

  1. Season the chicken pieces well with salt and pepper and place in the refrigerator for at least 2 hours, up to overnight.
  2. Heat peanut oil in a cast iron skillet to 350 degrees F.
  3. Beat eggs and water in a small bowl.
  4. In a shallow bowl, season flour with pepper.
  5. Dip chicken pieces in egg mixture and then coat well in flour mixture.
  6. Carefully add to oil, in batches if necessary, and fry until brown and crisp. Dark meat takes a few minutes longer to cook.
  7. Place lid on top of skillet to steam.
  8. Move to serving platter when done.
