Firecracker Deviled Eggs Recipe

INGREDIENTS

  1. 6hard-cooked eggs
  2. 1/3cupmild salsa
  3. 3tablespoonsreduced-fat sour cream
  4. 3tablespoonsgreen onions, minced
  5. 1tablespoonblack olives, dried on paper towel then chopped
  6. 1teaspoonlemon juice
  7. green onions (optional)
  8. red peppers, cut into thin strips (optional)
  9. parsley (optional)

DIRECTIONS

  1. Cut eggs in half lengthwise.
  2. Remove yolks and set whites aside.
  3. In small bowl, mash yolks with fork.
  4. Stir in remaining ingredients until well blended.
  5. Refill whites, using one heaping tablespoon yolk mixture for each egg half.
  6. Chill to blend flavors.
  7. Garnish with green onions, red pepper strips, or parsley, if desired.

    Excellent recipe. I never considered adding chopped olives to deviled eggs, but I will be trying this one. This is a heavenly blend of flavors. There is nothing plain about this recipe!
