Fettuccine With Creamy Tomato Sausage Sauce Recipe

INGREDIENTS

  1. 1tablespoonolive oil
  2. 4-6spicy sausage(such as chorizo)
  3. 2-4clovesgarlic, crushed
  4. 1 (400 g)cancrushed tomatoes
  5. 3/4cup semisun-dried tomatoes, roughly chopped
  6. 60mldry white wine
  7. 300mlcream(can use lite)
  8. 6spring onions, chopped
  9. 2tablespoons choppedsage leaves or2 teaspoonsdried sage
  10. 400gfettuccine or pasta, of choice

DIRECTIONS

  1. Heat olive oil in frying pan, cook sausages for 8-10 minutes or until cooked through.
  2. Remove from pan and chop roughly, cover to keep warm.
  3. Return pan to medium heat and add garlic, crushed and sundried tomatoes, white wine and cream and bring to the boil.
  4. Reduce heat to low and simmer, uncovered for 10 minutes or until sauce thickens slightly.
  5. Meanwhile, cook pasta according to package directions, drain.
  6. Stir cooked sausage, spring onions and sage through sauce, season to taste.
  7. Divide pasta among serving bowls and spoon over sauce.
