English Lemon Curd Recipe

INGREDIENTS

  1. 1cupbutter
  2. 2cupssugar
  3. 3eggs, lightly beaten
  4. 1/2cuplemon juice
  5. 1tablespoon gratedlemon peel

DIRECTIONS

  1. In top of double boiler melt butter.
  2. Stir in sugar, eggs, lemon juice, lemon peel.
  3. Cook over simmering waterfor 1 hour, or till thickened, stirring occasionally.
  4. Turn off heat. Cover with lid. Allow to cool.
  5. Store, covered in refrigerator up to 3 weeks.
