January 22nd, 2013 by alice  Tags: , , | Print This Post Print This Post

INGREDIENTS

  1. 4mediumpotatoes(peeled or unpeeled, your preference)
  2. 1tablespoon mincedgarlic, for potato water (optional)
  3. 1cupmilk
  4. 3-4tablespoonsDijon mustardor grainy mustard
  5. 1tablespoon mincedgarlic
  6. 1/8cupbutter
  7. 1/4cupparmesan cheese
  8. salt and pepper

DIRECTIONS

  1. Cut potatoes into quarters, cover with water and optional garlic and boil until tender- I used red potatoes with skin on.
  2. Alternatively, steam potatoes and garlic together.
  3. Just before potatoes are done, combine milk, Dijon mustard, garlic, salt and pepper until well mixed in a microwave safe bowl.
  4. Cover and heat in microwave for about 2 minutes, stirring half way until heated through.
  5. Drain potatoes, return to pot and mash lightly.
  6. Add butter, salt, pepper and mash again.
  7. Slowly add hot milk and mustard mixture, mashing until the potatoes are creamy and your preferred consistency.
  8. Add Parmesan cheese, mix and serve!
  9. NOTE- make sure you get some of the mustard grains in when you mash the potatoes.
  10. The grains may separate a bit if you pour the milk mixture in, so you might want to spoon in the milk and mustard mixture.
