Crustless Green Bean & Potato Tart Recipe

  1. 1lbboiling potatoes, peeled and sliced
  2. salt
  3. 3/4lbgreen beans, trimmed
  4. 1cupfresh breadcrumbs
  5. 3/4cupskim milk
  6. 1tablespoonolive oil
  7. 2clovesgarlic, minced
  8. 2teaspoonsoregano, finely chopped
  9. 2teaspoonsparsley, finely chopped
  10. 3/4cupparmesan cheese, grated
  11. 1/4cuppart-skim ricotta cheese
  12. 2egg whites, lightly beaten
  13. 2eggs, lightly beaten
  14. black pepper


  1. Preheat oven to 350 degrees F.
  2. In a pot of salted water, add potatoes.
  3. Simmer over medium high heat until tender (20 minutes).
  4. Drain, mash with a fork, and keep warm.
  5. Meanwhile, in another pot of salted water, add green beans.
  6. Cook over high heat until tender (15 minutes).
  7. Drain, finely chop, set aside.
  8. You could try to save yourself some clean up work and coordinate cooking the potatoes and beans in one pot (but you will have to do some extra work later separating them).
  9. In a small bowl, soak breadcrumbs in milk.
  10. In a small skillet, heat olive oil over medium high heat.
  11. Add garlic, cook until fragrant (careful to not let it brown), about 2 minutes.
  12. Add oregano, parsley, and green beans, and cook for 2 more minutes.
  13. Take off of heat.
  14. In a large bowl, mix bean mixture, potatoes, Parmesan, ricotta, egg whites, eggs, and black pepper thoroughly.
  15. Spoon mixture into an 8″ x 11″ rectangular or 12″ round baking dish and smooth out.
  16. Top with bread crumbs, and bake until golden (40 minutes).
  17. Serve at room temperature.
