Crock Pot Borscht Soup Recipe
INGREDIENTS
- 1 1/2-2lbsround steaks, cubed
- 1tablespoonoil
- 2cups dicedcarrots
- 2cups dicedbeets
- 1cup choppedonions
- 2cups choppedcabbage
- 2potatoes, diced
- 1cup dicedcelery
- 3cupswater
- 1 (12 ounce)cantomato soup
- 1tablespoonsalt
- 1tablespoonsugar
- 1tablespoonvinegar
- 1/4teaspoonpepper
- 1cuphalf-and-half cream
- 1/2cupsour cream
DIRECTIONS
- Brown steak in oil; drain.
- Place veggies in crock pot; place steak on top.
- Mix remaining ingredients except cream and sour cream, and pour over steak.
- Cook on low for 10 to 12 hours or on high for 5 to 6 hours.
- 45 minutes prior to serving, skim off fat, and add cream and sour cream to crock pot.
