Cream of Chicken Soup – Dairy Free Recipe

INGREDIENTS

  1. 2cupschicken stockor chicken bouillon
  2. 2smallpotatoes, peeled and diced
  3. 1largecarrot, peeled and sliced
  4. 1/2cupcelery, chopped
  5. 1/4cupcelery leaves
  6. salt and pepper

DIRECTIONS

  1. Bring stock or bouillon to a boil.
  2. Add vegetables, salt and pepper and return to a boil.
  3. Cover and simmer for 25 minutes.
  4. Pour into a blender and liquefy.
  5. Serve hot.
  6. If soup is too thick, use milk substitute or bouillon to thin.
